Fajita Recipe




One or two days before, marinate your meat…. Any lean cuts of beef will work.  Enough meat for about 2-3 people is usually what I use with the ingredients listed below.

You could just use a Ziploc bag, but I like putting the meat in a Tupperware container, then I can just dump the ingredients, pop on the lid and stick it in the fridge as long as I want. 

So, once your meat is in something then…

Add:
1 T.      Lime Juice
2-3 T. Olive Oil
1/3 c   Worcestershire sauce
1/3 c.  Soy sauce

and either a couple whole garlic cloves or 1-2 T of minced garlic.  That’s it. Let it sit.  Pop on the lid and let it sit for 2 days.

When you’re ready…

Get a small pan of oil going for your tortillas and a large pan of oil going for the meat.  While that is heating up… chop up red pepper, green pepper and yellow onion.

Toss all that in with meat… while that is cooking.  Fry up your tortilla shells. 

In about ten minutes (maybe 15 if you like your meat well done) you have a really tasty and healthy meal!  We use a little bit of sour cream, lettuce and cheese in our fajitas. So good!
